Key Lime Pie

Filling:
....4 Egg Yolks (Save Whites)
....1 Can Sweetened Condensed Milk
....1/2 C Key Lime Juice

Crust:
....1 Graham Cracker Pie Crust

Topping:
....4 Egg Whites
....4 TBS Sugar
....1/2 tsp Vanilla

Filling: Blend together Eggs Yolks & Sweetened Condensed Milk; then Slowly add Lime Juice. You can add a few drops of Green Food Coloring, to get that Lime Green Color. When completely mixed: pour into Graham Cracker Pie Crust.

Topping: Beat egg Whites until STIFF! When the white are so stiff you can turn the bowl upside down, then & only then add the sugar & Vanilla. —> Put topping on the pie filling, making peaks.

Baking: Bake at 350° until the peaks of topping are golden brown, about 20 minutes, then remove from oven & let cool… When (& Only when) room temp. put in refrigerator to Chill...
